Sloppy Sweet Potato Bites

  • Who doesn't LOVE a tasty sloppy joe! The flavors bring you right back to childhood. 

I've given this version a healthier kick and add a touch of sophistication. Don't worry there still messy and finger licking good. PLUS you can through them into a bun for the kiddos and VOILA, you have a simple, nutritious dinner that EVERYONE will enjoy! 

Here's what you need:

  • 1/2 lb lean ground turkey
  • 1 tbs. coconut oil (or cooking oil of choice)
  • 1 can organic tomato sauce
  • 1 carrot grated
  • 1/2 onion diced
  • 1 garlic clove diced
  • 2 tsp. liquid aminos
  • 3 tbs. tomato paste
  • 1 tbs. maple syrup
  • salt + pepper to taste
  • 2 sweet potatoes washed
  • coconut oil spray
  • Raw cheddar cheese (for topping optional)

Here's what you do:

  1. Heat oil in medium size skillet, add chopped onion and cook until soft. Add in garlic and cook one minute.
  2. Add in your ground turkey to the skillet; cook, over medium heat, stirring frequently to break up the turkey, for 8 to 10 minutes, or until no longer pink. 
  3. Season with salt + pepper.
  4. Add in tomato sauce, tomato paste, coconut aminos, maple syrup and grated carrot. Mix well. Reduce heat to low and allow to cook for 15-20 minutes covered or until sauce has thickened.
  5. While your sauce is cooking. Set your oven to 375. Slice the sweet potato into 1/2 inch disc size. Spray a cookie sheet with cooking spray and place disc on tray. Season with salt and pepper. Cook 15 minutes per side or until lightly golden brown. 
  6. Place sweet potato disc on a plate. Top with a spoonful of sloppy joe mixture and finish with a few slices of raw cheddar cheese. You can eat this with a fork or knife or just pick them up and dig in :). 

Want dinner even faster? Make it in the Crock-pot!

This recipe cooks up beautifully in the crock pot! Just follow the direction for browning the turkey meat. Add the remaining ingredients to your crock-pot set on low for 4-5hrs. Mix together and your ready to go!
