Almond Butter Cups

Nothing screams HALLOWEEN more than a reeces peanut butter cup! As I have cleaned up my diet, eating one of these would leave me feeling (for lack of a better word) like CRAP! 

So I have cleaned it up! Let me tell you, these may be better than the original. Healthy, paleo, low in sugar, gluten and dairy FREE! 

So skip the Reece's and make your own stash of halloween treats!! Your taste buds and body will thank you. xo

Ingredients:

  • 1 c. almond butter
  • 1 bag Enjoy Life Chocolate Chips(can use dark chocolate)
  • 1 Tbs coconut oil (optional)
  • 1 Tbs raw honey (optional)
  • sea salt (a pinch or two) to taste

Tools needed:

  • mini muffin pan
  • mini cupcake liners
  • glass measuring cup  (2 cup)
  • measuring spoons
  • small mixing bowl

Directions:

  • Melt Enjoy Life Chocolate Chips with coconut oil (optional) in the microwave or on stove in a small pan. Stirring frequently.
  • Mix almond butter in separate bowl with honey (optional) & a dash of sea salt.
  • Line mini muffin pan with liners
  • Put about 1 tsp of melted chocolate in bottom of liner (just until it covers the bottom, not too thick)
  • spoon a small amount of almond butter on top of the chocolate
  • cover almond butter with chocolate
  • sprinkle with sea salt (optional)
  • put in the fridge for about a 1/2 hour to cool.
  • enjoy! makes about 24 pieces.
